Open daily for lunch and dinner, Duo Modern: the Restaurant at Market Hill is an important addition to Round Top and an important part of the Market Hill experience to Paul Michael. He has a passion for bringing people together, and it’s in this spirit of togetherness that he began hosting a pig roast each show – in fact, he even built a special smoker for the occasion.
Paul Michael loves creating an atmosphere of people gathering around, being a part of the process, seeing how food is prepared and having conversations about it.
This kind of intention is evident in every detail of the restaurant, including the open kitchen where you’ll notice two new chefs at the helm.
Houston-based sous chef Nathanel “Nate” Pineda and head chef Gino Llanes, a 21-year vet, say they have never had quite the experience to creatively deploy their passion like this before.
“We fell in love with the people here in Round Top. It is a different atmosphere than Houston,” says Pineda. “ We are able to make relationships instead of just a meal.”
Nate and Gino marry being artsy and functional. They aren’t beholden to one particular style or type of cuisine. Menus are determined day of, based on what is seasonally available, and what inspires the chefs.
“Inspiration abounds at Market Hill. Our surroundings in the restaurant, filled with beautiful decor, antiques and art, provide never ending inspiration,” says Pineda. “ That coupled with the truly inspirational and world-class dealers at Market Hill help us keep the menu fresh and innovative.”
The duo will also be available for private catering for special events at Market Hill or off-site for up to 300 people in Round Top and the surrounding areas. Whether it be a Round Top wedding, rehearsal dinner, family reunion or banquet, our team has you covered.
“What we are really excited about is the fact that this is a blank canvas. We aren’t being micro-managed,” says Pineda. “That lets our creativity abound.”
